Cold Beverage Ledger
Build Cold Drinks That Hold Their Flavor
The enemy of iced coffee is unintentional dilution. As soon as a hot beverage meets freezer ice, thermal exchange melts roughly 80 to 120 grams of water per serving. To preserve sweetness and heavy mouthfeel, we account for melting water inside the initial formula rather than treating ice as an afterthought.
Hot water extracts volatile aromatic terpenes that cold water cannot dissolve. Dripping this hot liquid directly onto dense ice cubes traps these fragrance compounds before they oxidize into stale flavors.
The 60/40 Split Ratio:
Coffee Dose: 30g medium-fine grind
Ice in Carafe: 180g hard frozen cubes
Hot Water Kettle: 270g water at 95°C
Total Resulting Liquid: 450g chilled brew
- Place 180g of dense ice inside your glass server below the dripper.
- Rinse your paper filter with hot water separately and discard rinse water.
- Add 30g coffee, bloom with 60g hot water for 45 seconds.
- Pour remaining 210g in slow, steady circles. All ice should melt as the final drop falls.
- Pour immediately over fresh ice in a chilled drinking tumbler.
Cold immersion extracts fewer volatile acids, resulting in a chocolatey, mellow beverage that stores refrigerated for up to 10 days without degradation.
Concentrate Strength:
Coffee Dose: 100g coarse French press grind
Filtered Water: 500g cold filtered water
Extraction Time: 16 hours at 18°C – 20°C ambient room temp
Serving Ratio: 1 part concentrate to 1 part fresh milk or water
- Combine ground coffee and cold water in a wide glass jar.
- Stir gently until all dry pockets are saturated.
- Seal and steep in a cool dark pantry for 16 hours.
- Strain first through a coarse stainless sieve, then pass through a dampened paper filter to strip fines.
Espresso Over Ice
The Shakerato & Iced Americano
Pulling espresso over ice creates shock bitterness unless you manage temperature quickly. Shaking aerates the crema and chills the liquid in seconds, building a velvety head resembling stout beer.
A classic Roman bar staple: freshly pulled double espresso shaken aggressively with four large ice cubes and a barspoon of simple syrup.
Formula: 38g hot espresso + 5g simple demerara syrup + 100g large ice cubes. Shake in a Boston shaker for 15 vigorous seconds. Strain through a fine hawthorne strainer into a chilled coupe.
Pouring espresso over ice melts the cubes unevenly. Pouring cold water first cushions the shot and prevents burnt astringency.
Build Order: 150g cold filtered water → 120g hard ice cubes → float 36g freshly pulled double espresso gently across the top surface using the back of a spoon.
Why Ice Quality Matters More Than You Think
Cloudy freezer ice contains trapped gases and absorbs lingering odors from frozen meats and vegetables. Furthermore, hollow crescent cubes melt twice as fast as solid clear blocks. For pristine iced coffee, freeze filtered water in silicone 2-inch square molds. Large cubes minimize surface-area melt while maintaining freezing temperature.
